Helpful Hints

* For and extra fiery bite, add another 1/8 teaspoon of cayenne pepper to the grouper recipe

* Vegetable creole keeps well. Make extra and save for another time.

*To save cleaning time make the grouper and creole in the same skillet.

*Any type of firm, non-oily fish filet can be used.

Peacan-Crusted Grouper with Vegetable Creole

1/4 teaspoon salt

1/4 freshly ground pepper

1/4 teaspoon cayenne pepper

2 egg whites, lightly beaten

1/2 cup of finely chopped peacans ( 2 ounces)

3/4 pound grouper filet

2 teaspoon olive oil

Olive oil spray

Vegetable Creole

2 teaspoons olive oil

1/2 cup sliced yellow onion

1 medium-size green bell pepper, sliced, (1 cup) 1 zucchini, sliced (2cup)

4 medium-size garlic cloves, crushed

2 cups canned no-sugar-added, diced tomatoes

1 tablespoon Worcestershire sauce

2 (.035-ounce) envelopes sugar substitute

Peacan flavored grouper and vegetable creole are updated versions of southern comfort foods. To cook fish fast, preheat the baking tray in the oven. The hot tray will help to cook the fish on the underside without having to turn the fish.

     Preheat the oven to 400 degrees. Line a baking sheet with foil and place in oven to heat. Combine the salt, black pepper, and cayenne on a plate. Line up the spice mixture, the beaten egg whites, and the pecans in a row on the countertop for easy coating of the grouper. First, roll the grouper in the spice mixture, coating both sides, Next, dip the grouper into the egg whites, and then roll in the pecans. 

     Heat the olive oil in a non-stick skillet on medium high. When the oil is hot, brown the group for 2 minutes. Turn and brown the other side for 1 minute. Remove the baking tray from the oven and spray with olive oil. Place the grouper on the tray and return the tray to the oven for 5 minutes to finish cooking. Serve with the creole. (Makes two servings)

One Serving: 156 calories, 6G protein, 22G carbohydrate, 5G Fat, (1G Saturated Fat), 0MG cholesterol, 378MG Sodium, 7G Fiber.

Heat the olive oil in a nonstick skillet on medium high. Add the onion, bell pepper, zucchini, and garlic and sauté for 5 minutes. Lower the heat to medium. Add the tomatoes, Worcestershire sauce and sugar substitute. Cover with a lid and cook for 5 minutes. Serve hot with the grouper. (Makes two servings)
